Sterling halibut with mussels in a teapot

Ingredients

  • 600 grams of Sterling® halibut in 50 gram pieces. Skin and boneless
  • 1 kg Mussels
  • 1 shallot in rings
  • 1/2 thinly sliced ​​fennel
  • 4 dl White wine or freshly pressed applesauce
  • 2 tbsp Olive oil
  • 1 tablespoon finely chopped parsley
  • Salt

This is the perfect hiking snack – enjoy it on your next adventure.

 

Before you go on your trip, get ready by washing the mussels, check that they are all fine. Put the pieces of halibut in a plastic bag with 1 teaspoon of salt, turn this well and tie the bag again. Cut the onion and fennel and put in a bag or box. Pack the other ingredients and the teapot.

 

In the pot you have oil, fennel and shallots. Then add the mussels, place the pieces of halibut on top. Put in white wine or applesauce, put on the lid. Put on the heat. Follow along and check after a few minutes. When the mussels have opened, remove the pan from the heat, let it stand for 5-10 minutes. Sprinkle on parsley when serving. Remember that the power at the bottom is fantastically good. Feel free to dip the bread in this!
